Smoked salmon with Rösti
We recently discovered some amazing smoked and salted wild salmon from a local producer. Its quality is so good that it seems wrong to just put it in a simple salad bowl.
I therefore decided to pair it with a warm, rich and fluffy rösti. Don’t be scared off by this “fussy” name with an accent – it’s actually a very quick and easy dish to prepare in just 15 minutes!

Ingredients
1 small autumn potato (peeled and grated)
3 tbsp olive oil or butter
1/4 teaspoon salt
A pinch of ground black pepper
Smoked Hardy salmon (sliced)
1 tbsp sour cream (optional)
A pinch of dried dill (optional)

Preparation
Heat half the oil or butter in a frying pan over medium-high heat until it starts to sizzle slightly.
Press the potatoes firmly between paper towels to remove as much moisture as possible.
Place the grated potato in the pan and use a spatula to form a circle, pressing lightly so that the surface is flat.
Bake for 5-10 minutes until the bottom is golden brown and crispy. Carefully slide a spatula under the edges to loosen the rösti from the pan.
Place a plate on the pan and turn it over so that the fried side is on top.
Add the remaining oil or butter to the pan. When hot, carefully slide the rosti back into the pan, other side down. Fry for a further 5-10 minutes until crisp and golden.
Serve with slices of smoked salmon and a dollop of sour cream, if desired.
Tip
Squeeze as much water out of the grated potatoes as possible to make a crispy and tasty rösti.
